Grandchildren of esteemed community and fishing industry leader, the late Billy Smith, have Down East roots dating back to the 1700s. The restaurant is named after our late father, William Ellis Smith, when we had the original Wild Will's 25 years ago on nearby Harkers Island.

What a week! We had Shrimpgate in the house this past weekend. On Sunday, we stopped in Kenly at Scott Brother Farms to see how sweet potatoes are cured and kept. Do you know where your shrimp come from? We do, and it's not off the back of a food truck and doesn't come from Ecuador. They come out of those beautiful nets from the stern of a trawler. It's been a beautiful week on Core Sound, and if you look hard in the first picture, you will see a yellow butterfly. So I saw some on Monday in Atlantic and at the banks. The first picture is at Old Drum Inlet. We hauled a lot of stuff up that path to our camp when the tide was low. Uncle Monnie kept his houseboat in there, and Monday, there was plenty of water for one. We saw some yellow butterflies today, in the sound, and if you know, you know. Last weekend, William minced drum for family meal, and it didn't disappoint. This weekend is WW prime rib, sea scallops out of the cloth bag, Wanchese tuna, South River soft crabs, fresh jumbo lump crabmeat, and Pamlico Sound shrimp. We are back at it after the crazy long week in Raleigh. Shrimpgate is over, but unfortunately, it is not entirely gone. I met some of the best people over the last few days, people who knew my parents and grandparents from Pamlico County and other coastal counties. Also saw some of our Hyde County friends, and we talked about Mattamusket onions and lo and behold, guess what showed up at Wild Will’s yesterday? Those onions, so we will be serving whole baked Mattamusket onions this weekend along with North Carolina Shrimp, Prime Rib, and fresh jumbo lump crab cakes. Our new Shrimpgate cocktail is really smooth. If you're looking for sharks, we might have seen a few of those in Raleigh. Shrimpgate is over. What a relief and a victory.

NC shrimp will be back on the menu at Wild Will’s this weekend, and we just might celebrate with a shrimp-themed cocktail. After a whirlwind week, we’re taking a breath and holding our heads high.

If I’ve aggravated you this past week, I’m sorry. But some of our friends were in the fight of their lives—and so was North Carolina’s seafood industry. We weren’t just defending shrimp. We were defending heritage, jobs, and a way of life.

There are too many people to thank individually—and we don’t want to leave anyone out—but we’re especially grateful to our friends in the NC House and Senate, those in DC, and leaders on both sides of the aisle who listened and stood with us.

We met some incredible people this week. We saw the good, the bad and the ugly. We've learned quite a bit , and are fine not going back to Raleigh anytime soon.

There’s room for everyone to fish. The seafood community wasn’t against the bill—until that last-minute amendment to ban trawling.

We still believe in facts. We still believe in science. And we hope the long-promised study will prove what we’ve said all along: we are responsible stewards of the sounds.

Thank you to Rep. Bobby Hanig, Rep. Celeste Cairns, and every coastal representative who stood tall when it counted.

Shrimpgate is over. But the fight for our coast never is.

This legislation could significantly impact our access to North Carolina shrimp and negatively affect coastal communities, including many rural coastal areas. It’s not just about my restaurant; it’s about the many restaurants that take pride in serving fresh, local shrimp. The tourism industry in Carteret County also relies on shrimp, as visitors come to enjoy the authentic flavors of our coast, not imported shrimp! With over a million acres of estuary already closed to trawling, small boats struggle to find opportunities in the ocean, where most of our shrimp aren’t even located.

It’s disheartening to see North Carolina not promoting domestic shrimp and instead trying to limit our local industry when other states are actively testing for imported shrimp.

When actions are taken against an industry without proper consideration, it raises concerns about what other industries might be next in line.
We are due our due process in all of this!
The NCGA has commissioned a million-dollar study, and it’s concerning that there seems to be a rush to pass it before its release next week. Why was this not made more transparent?

This situation makes me worry about what industries could be affected next—farms, restaurants, or bars? Together, we can make our voices heard to protect what matters most!
